Ginger spice muffins
I took a bit more time and care with these than I did my choc cherry muffins! They were for eating with *company*!I made these muffins with pretty much the same recipe as my choc cherry muffins, I just added tiny bits of stem ginger instead of chocolate, and instead of morello cherry jam I used ginger and rhubarb. I may also have added a little bit of mixed spice (half a teaspoon) to the flour as well. (The company loves ginger!)
I did half of them in fancy bundt moulds and half of them in normal muffin tins. I cut some shapes out of different color fondant, and added some chocolate bits made by our little local chocolate shop in my town. I found some little card wraps in a cheap outlet store. I knew they'd come in handy one day!
