Chicken Scarpelli
Sausages (I use chicken sausage), cut in 1" pieces
Chicken Breasts
Red, orange and/or yellow peppers, sliced the long way
1 Onion, cut in ieces
2 teaspoons mminced garlic
1/2 Cup dry white wine
1/2 Cup chicken stock
1/2 Cup balsamic vinegar
Salt & Pepper to taste (I don't use pepper or salt)
Potatoes, cut very thin like potato chips
Brocelli (I misrowave them first then throw them in the pan)
1/2 tsp oregano
In a very large pan with sides, take film off from sausages and brown for about 8 minutes, or until sausages are done. Remove from pan and put in a dish, set aside. Heat up a little oil (virgin olive oil) in pan, add chicken and cook until done, about 15 minutes. (You can either cut up your chicken in small pieces or leave it whole (I cut the chicken up). Cut up & add to pan: peppers and take seeds out, cut onion in small pieces potato and garlic, saute for about 5 minutes or until peppers, potatoes and onion are a little soft. Add dry white wine, chicken stock and balsamic vinegar and brocelli. Bring to a boil covered and lower heat. Simmer slowly for about 10 minutes more, add ogeano
